Jalapeno Popper Dip

2 (8 ounce) packages cream cheese, softened
1 cup mayonnaise
1 (4 ounce) can chopped green chilies, drained
1 (4 ounce) can diced jalapeno peppers, drained (about 1/2 a cup)
1 cup grated Parmesan cheese (split)
¼ Cup Breadcrumbs (maybe a little more)

Mix top 4 ingredients with ½ cup of Parmesan put in dish, mix other ½ cup of Parmesan with bread crumbs in bowl then sprinkle on top.

Cook at 375* for about 20 minutes or until a little brown on top.

Serve with Lime Tortilla Chips.....Voila!!

Jamie"J" (just something shorter because Jamie is SO long)

Amanda Courtney (or maybe Megan)

Molly Linda (too embarrassing to even say)

Norah Sam (because of Who's the Boss?)

Oatmeal Peanut Butter Chip Cookies

1 stick unsalted butter, softened
1/4 cup shortening
1 cup brown sugar
1/3 cup granulated sugar
1 egg
1 egg yolk
1 cup peanut butter
1 T honey
1 tsp vanilla
2 1/4 cup flour
1 tsp baking powder
1/2 tsp sal
t1/2 cup oatmeal
1 bag peanut butter chips
cinnamon sugar

Preheat oven to 350 degrees.
Line a cookie sheet with parchment paper.Mix butter and shortening together.
Add sugars and cream together until smooth.
Add egg and egg yolk and mix until combined.
Add peanut butter, honey and vanilla. Mix until combined.
Add flour, baking powder and salt. Add gradually. Mix until a dough is formed.
Stir in oatmeal and peanut butter chips.
In a bowl, combine 1/2 cup sugar and 1/2 tsp cinnamon. Form dough into golf ball-sized balls. Roll in cinnamon sugar and place on baking sheet. (I skipped this)
Take a fork and press into each cookie.

Bake for 8-9 minutes (I had to cook for 13 mins). I always remove my cookies when they look slightly underdone…They will continue to cook once removed, and this makes for a soft cookie.

(I ate about 10 of these on Sunday when I made them. Big hit at work today, I had to get them out of my apartment!!)

A New Record

Our very own, Lisa Jenks finished Miles from Nowhere this weekend, in one day!! It took her 4 hours to read this book. Go out and get your copy today! Sounds like everyone should be able to finish this one.

Also, we learned this weekend that the author is local and teaches at Columbia. Maybe a "surprise guest" at the next BC. We shall see.......

Recap February BC

Thanks to Tiffany for hosting! That artichoke dip really is the best!

Unfortunately yet again only 3 members (aka 'Anne', 'Sabrina' & 'Courtney') read the book this month. It was a tough one...many of us tried to get into this book but it wasn't happening. This one gets a big fat "Skip it". Some quotes from girls that finished the book were:

"The book never came together."
"Too much description."
"Oh and too much talking about dead people."

Now on to the important stuff....everyone agrees Angelina and Brad are totally breaking up, maybe not this week or next but some time in the coming months it will happen. Trust us, we know. Also, we dislike that Alexis chick from RHoOC.

Topics of conversations included hair removal (demonstration included), cats, CTA, new love interests, names (more about that later), Grad school, black eyes, Oscars nominations, mayonnaise, Super Bowl plans or lack there of, Hasians, and what-do-ya-know BOOKS.

After a nice discussion and tie breaker vote....our newbie (who was stuck at work late and didn't even make it) picked the book for next month, Miles from Nowhere by Nami Mun. You can purchase here.

Next up Liz or should I say "Phoebe" to host.....maybe March 11th?

We have a new member!

Could everyone try and be on there best behavior tomorrow night!?!?

We have a new member attending.

We want to show her that we barely all read the book every month, don't we?

We want to show her that we have an 2 second intellectual conversation about the book, don't we?

We want to show her that we catch up on gossip pretty much the whole time quickly, don't we?

We want to show her how we each drink about six two glasses of wine, don't we?

We want to show her that we talk very loudly softly and lady-like, don't we?

We want to show her that we interrupt each other constantly wait for our turn to speak, don't we?

We want to show her that we argue all agree about what book will be next, don't we?

We want to show her how we chug sip our wine, don't we?

We want to show her how we pig out snack on our light appetizers, don't we?

We want to show her how we stumble into cabs leave gracefully, don't we?

We want to show her that we wake up hung over rejuvenated and ready to start the work day, don't we?
